It gets pretty hot when we’re burning ricks of hard maple. But the charcoal that results makes it all worthwhile. You see, its ground up and packed tightly 10 feet deep in vats. Then our just-made whiskey is seeped down through it … drop by drop. This is called Charcoal Mellowing.
